How well will a 55# Minn Kota trolling motor handle a 16'11" Ranger 681C with say 15 mph winds? I know bigger is better....but that's what I own. Will it work?!?

Bottom Line: "It's what you own." It will work but it will have to work hard in 15 mph wind. If you can swing running two batteries in parallel, it would run a lot longer.
Those are nice boats.

I've got the 681VS with a motor guide 55# that was on it when I bought it. It will work. Mine will probably get replaced before my other electronics. So far it has been fine fishing up to 8 hours, but haven't really had a long, hard day with it yet.
