Hey I was wondering how low of a rod rating you guys are using to throw these big baits.

Manufacturer rod ratings vary way too much to use them as a consistent guide. You need to specify a make and model.

My loomis 25 is about as light as I'd go for pounders. Other fairly light rods that I've heard of being used are the xh okuma and xh shimano.

Exactly, you cannot tell how much a rod can handle without feeling it. Most rods will handle quite a bit more than what they state on the rod.
