I'm looking at the Lakemaster Version 4 and Version 5 Wisconsin map chip for a 999 Humminbird. Am I correct in thinking the Version 5 is the newest version and has more lakes available?

Yep! V5 has more lakes in HD or better contour lines and might have added some lakes. You could go on their website and see the changes in versions.
