I recently picked up a 681vs with a 135 mercury 2 stroke carb engine.. it has currently a 19 pitch aluminum prop but also came with I think a 24 pitch stainless prop, what would be the recommended prop for this setup?

I've got a Ranger 617 with a 150 opti on the back, so a similar setup to yours, but not exactly the same. I used to have a 125 merc carbed 2-stroke on it before the opti. I found that my two best props are a high-5 21P and a Tempest Plus 21P. Both are stainless. My 125 had a lazer 2 21P on it. The 24P stainless that you have would be way too much pitch for my engine to turn, so I'd be sort of surprised if it worked for your setup. Best thing you can do is test the on-water performance while keeping tabs on your engine RPMs for both the props. I wouldn't be surprised if you ended up finding that a 21P is the best pitch option for your rig.

I have a 135L with a 21 pitch stainless. Good holeshot and the boat will touch 50 mph by myself. This is on a 175 tourney pro but Rpms are where they should be topend.

I can't recall if the carb motor is the same gear ratio and RPMs as the opti. I'm going off the opti, but confident the same props will apply: You'll like a 21 pitch merc trophy, possibly a 23 pitch trophy if you fish alone and/or without a lot of weight in the boat. You'll probably need the exhaust diffuser ring from merc, which is a $10 part that snaps on the base of the prop to direct the exhaust through the prop rather than over the outside.

I have a 617 like Wally with a 150 Optimax.

I agree, I put a High Five 21P on, and pretty much have never taken it off.

I have a 19P Tempest Pro that just sits in my garage that came with the boat.
