What are the major differences in the brands on double 10's and 13's? I am most concerned about blades.

Components and construction. Blade Thickness makes a big difference. IMO, the thinnner (.025) blades seem to flare better and create a little resistance. The thicker blades spin closer to the shaft and will seem to pull easier. I've sometimes had problems either getting the thicker blades spinning right away or having them stop spinning during retrieve. Personally, for 10s I prefer the thinner blades, for 12s or 13s sometimes the thicker blades are nice.
Many other variables too though... main shaft diameter, clevis size, bead configuration, weighted?, jointed shaft?, and probably much more than I know.
