What is considered too HIGH and what should be done to prevent stress.

I am not from the south, so for me, it would be a guess at best...but I would put it at water temps at 78 or higher. With the lakes I fish, the fish are usually in water deeper than 8 feet or so, so there is cooler water to be in.

Stress reduction: Fight it quickly and keep it in the water. I would NOT tire the fish too much. It'd be as quick as possible...I wouldn't even use a net, unless the fish was hooked too deeply. Any pictures would be with the fish in the water.
if the fish became too stressed, the livewell would be used. oxygenated water and the natural incomming flow would be used, along with some stress reducer like they use when doing water changes in an aquarium.
