Making a bumpboard out of 8" PVC board and am debating how to make my hinge. I have an 8" stainless piano hinge but I'm wondering as to whether having the hinge on top of the board will injure the fish's slime coat?

I have two 1" small hinges on top and no problem here.
Although my hinges are very thin.

Agree with Propster, put it on the bottom. I put 2 1" SS hinges on mine and still working good as new.
