I've been trying to figure out a way to charge 2 deep cycle batteries without using electricity, because where my boat might sit doesn't have any power.

I'm not affiliated with Northern Tool, but here's the product I was looking at.

It's a 100 watt crystalline panel with 5.85 amp output.

It'll will be attached to a regulator and wired up to a 3 bank on-board Minnkota charger.

I understand that sunshine is a variable, but will this setup charge dead/nearly dead deep cycle batteries after 5 days?

Take a look at some of the products here. A good friend works for them. Some pretty unique ideas.

the comparable panel i saw on there seemed to be larger than this panel. I'd like to keep it as compact as possible.
