Other than adding another battery to the system, what else needs to be changed to switch from a 24 to 36 volt system? Will the wiring in the boat need to be switched out? Do I need to change the plug-in up front?

I just upgraded myself, and the only thing that I changed was adding a battery. Wiring was heavy enough I was told by Ranger. May want to look at the guage of the wire from your batteries to the plug and contact a marina to verify. Nothing changed on my plug, there are still only two wires coming into it.

When you go up in voltage you drop in amps to achieve the same power, watts. That's the benefit of going to larger voltage TM is the reduction in amp draw. So your wire gauge should be fine if you were running a 24V previously. As Marshall mentioned you may require a new plug.
