I have an ordinary eagle strata 128 depth finder and I was wondering how I should change the settings manually to be able to get the most out of it. I'm talking about the sensitivity, fish-ID on/off, use zoom or not, ... I'm going to spend some time trying it all out on the water next weekend so any tips are most welcome!

The AUTO settings on that unit are pretty good, but I would suggest turning OFF the fish ID, and stepping up the gain until you begin to get a double echo over a known sand bottom (two bottom readings at the base of the screen) then back it off one setting. Can't remember if that has a surface clutter setting, if so set it as low as you can to avoid interference. Your screen will look cluttered at times, but all that clutter is targets, items in the water.

Keep in mind the transducer cone is only covering 1/3 the total depth in a 'circle'. If your rig is in 30' of water, the coverage circle is only 10'. In order to draw a perfect fish signal 'hook'. the fish needs to move through the near center of the cone, not likely if you average 10' as your boat position.
