fairly new to painting and this first attempt at a bluegill/sunnie how would you suggest to change up colors

I think it looks good the way it is. Get some top coat on it, that'll help the colors pop more.

Hook rash and lots of teeth marks is about the only suggestion I can make to make it look better.
