A tiller is a good way to go as it creates a lot of room as noted.

For a used side console (I'd avoid a full windshield, the "middle" guy just gets jammed up), I'd look at a 17' Crestliner FishHawk. I believe they have a 91" beam so good stability.

The front deck is large so you and one child could fish from the front deck with the other child fishing from the rear deck.
