I own a 2075 Pro-V (bought in July), so I can add in a bit here. I was choosing between the 620/2075 due to my parking situation, but they're so close to the 621/2175 a lot of the same applies.

My setup is 300 Pro Verado, 15 kicker, 112 Terrova with Solix 10s on all networked on the dash and bow. I've like the one boat network with those 3 things, controlling the Terrova from the Solix is so game changing. The 300 gets me close to 62 at WOT. Cruise at ~4000 rpm right around 40-42, getting about 3.8-4.0 mpg. I have the fold down rear seat option, which gives me the either 6 total seats for cruising around, or a massive rear casting deck. I love it, but I can see others feeling like it's in the way. I honestly feel like the ride is pretty darn good, once it gets real bad out there, nothing is really 'comfortable.' (My dealer told me the Lund was better than the Ranger in his friends opinion...i take that with a truckload of salt). If you want to handle big water really well, buy a Warrior.

8'6" rods in the top row no problem, 3 rows total. Then you have the gunwale storage that'll take 10' easy. The wide gunwales for me are no big deal, but I know that's not the case for most, you already have one so you're used to it. I mainly troll, so I'm in love with the track system. Looking to upgrade to the Cisco setup in the future. The front casting deck is great, tons of room. With my fold down seats in the back, 4 could cast if you're good, 3 would be very comfortable.
Build quality is great so far as well, either brand you should be good there.

As far as the new V8s go, I've read nothing but positives on them. The 350 will use a bit more gas, but since that one steps up to the water cooled supercharger, it's been pretty bulletproof.
