I have redone one boat where I tore out all of the carpet, stripped the glue and redo the carpet with new adhesive. Fun, but tedious process, but is doable. The biggest hassle is the prep work to get ready for new carpet. That will be time consuming and at times requires some good elbow grease to get all the surfaces prepared.
The rig I did was aluminum, so prep work was not too bad. I would guess since you are doing a ranger 680, the carpeted surfaces will be those of doors up in the bow and the main floor in the rear. I'd guess the main floor has an edge border sown in for a finished look, so that part will be one you might end up taking to a shop of some sort to do. The glue down shouldn't be too bad overall.
The hatches hopefully can be removed fairly easily, then you can pull the old and clean up, then cut and glue the new pieces. Only thing to be sure of is the grain of the carpet all is going the same way so the color looks good and even.
It can get a touch costly, but when it is all done, it'll look great!!
