Location: Kodiak, AK | If you just watch the mounting angle during installation, you'll be fine. I don't take mine off every time I launch the boat. It's just that if you slap it on there and don't pay attention to where the winch tower is in relation to the TM, you can smack it when it slides off the trailer.
Here's a couple pics of mine back when I had a Terrova, but my Riptide is of course mounted exactly the same. You have to have it out far enough so it doesn't hit the rub rail when it's deployed and if you don't pay attention, you can mount that overhang right over the winch. Just watch that angle before you drill your holes and you're fine.
As far as getting it up quickly, the shaft slides through a collar and nothing other than weight holds it down. So if you need to get it up in a hurry, you just grab the top of the motor and pull straight up. As far as stowing it, it's not a problem. Some guys talk about having to add lube and have troubles with it binding...I've never had those issues. You just gotta get it straight and it moves fine. If you're tweaking it and bending the shaft out of alignment, it can bind up of course.
