As many have suggested, Doug V has good humminbird tutorials.

One thing I don't like doing is messing around for a long time with fish finder on the water to try and get the best settings. Actually, if you watch the videos Doug will tell you that there are good settings for having a perfect picture and there are different settings for finding fish. I like to record the data while I'm fishing and then I will mess around with settings when I get back.

Not sure about your model but if it has a recording feature, use it! You can record all the finder data to an SD card while you are on the water and then bring it back home and play it back. When you play it back, you can change all the settings you want to see what will improve the picture, fish finding etc.
