I don't have a fishhawk, but do have a crestliner CMV, some of the interior on the two boats are similar. I mounted mine at the end of the "box" or side wall that is right behind the drivers side seat. It is built out for the throttle and shifter controls. It was handy, because the cable only had to be routed a few feet, and there is a small gap where this boxed out area meets the side of the boat, where I could squezze the cable through and avoid drilling any big holes in case I had to move it. Just driiled a couple small holes for the base of the puck and the cable is exposed for only 3-4 inchs going to the puck. Kind of a out of the way spot also.

Anywhere there is a clear shot of the sky from all angles is good. People get way to hung up thinking that their gps is accurate to a 3' circle. Take a look at your "position error" sometime on the water, mine is usually around 18' at the least and I have seen it over 40' to 50' and more a lot of the time. It is constantly changing. Figure if you have a 18' boat and the puck is in the middle that is 9' to either transducer, front or back, doubtful that your position error is going to be less than that most of the time. If you want to mount it next to a transducer, I would do it in the front, as that is where I make the most waypoints, if I believed it mattered.
