I did the same thing to my 1986 sylvan sea monster. After replacing the plywood instead of covering it with carpet like the boat originally had I filled all the screw heads and voids in with caulk and smoothed everything thing out. Then I had the everything covered with a spray on epoxy, the same material you would use for a bed liner in a pick up truck. You can get it in any color you want. It looks great, seals everything up and is very easy to clean.
