I run a 4 blade Hustler 21 pitch on my Evinrude 225 / 620. I tried a 3 blade when I first got my boat, but my RPM's were too high at low speeds. The cavitation resistance is correct, I think as for the hole shot, it takes a bit longer to get the RPM's up. However, the boat goes on plane quicker so it balances out. Plain and simple, the 4 blade pushes more water, thus better hold, better performance.
