Just remain cognizant of the probability that much of the boat's flotation is in the seat benches/supports. You'll have to find a spot to replace an equal amount of flotation in the new configuration. Some of the structural integrity of the hull is also maintained by the existence of the seats. I'd talk to someone who knows a whole lot more about it than I do before proceeding.
