Mine has a 125 on it and quite frankly I dont think i could put her into a hard turn at WOT, seems to want to skip to me but maybe im just being a p*#@y. I understand it may be rough, but can somethign along the lines of a 60-75 degree turn be accomplished without backing off the throttle considerably?

yes it can.
buy a 1700 Deep-V!

the E-Mag is designed as a fishing platform, and that's what it excels at beyond any other boat in it's class. the "price" of all that stability is the somewhat less "grip" of a relatively flat bottom in hard turns. keep in mind that you are talking about a very shallow boat going very fast.
trimming down slightly before you start your turn should help.
