hooking the batteries in a series is exactly what you do to get 24 volts. If you want to tap 12 volts from the system than use the battery that is negative grounded and hook ground wire to the negative of that battery and a red wire to the positive side of that same battery and you will only recieve the 12 volts you need for what ever you want.
I used to hook two batteries in a series to start my demolition cars and ran the ignition off the grounded battery
