John,

You may already be doing this, but... Make sure you are checking your speed with a GPS and not the speedometer in the boat. GPS is the only real way to get an accurate reading.

The speedo's in the boat run off of water pressure from the lower unit of the engine. Once the water line gets a little scum built up inside or dirt in the line they are hardly accurate. Even when brand new they aren't that accurate.

I can tell you that the stainless prop will most likely improve your hole shot, as the blades on the stainless prop will flex much less than the ones on your aluminum prop.
