i've found it depends a lot of the level of accuracy you're getting on your GPS - ie., how many satellites it's picking up at a given time.
if your accuracy is only +/- 15m you clearly can't depend on it to keep right on a breakline.
if you can get your accuracy to within +/- 3m you'll be in good shape and you'll show up on the map right about where you know yourself to be in reality by comparing shoreline, depth, etc.
