Are you trimming all the way down(in) for take off? Are you trimming out once you get to full throttle? It sounds like you have more than a prop issue if there is 1000 rpm difference between those 2 props. How did the previous owner have the boat set up? In my experience, and I am no expert, when going from aluminum to stainless, I have had better results by going down a pitch size, not up. Are the props 3 blade? Is the max rpm for this motor closer to 6000? Motor height can be an issue as well. More info about your setup would help.
