I also have a 16' Lund Rebel. I mounted my Minn Kota slide bracket to a new top plate exactly like you want to do. It is very ridged.

I used 3/4" plywood and mounted the red marine carpet to is. The deck is as large as I could make it and also makes a good casting platform for my son.It does not stick out beyond the sides of the bow!
There is plenty of space to stand with each foot adjacent to the trolling motor. I used 3 rubber spring extenders that you can buy at an auto store. (those rubber blockes that we used to mount between the coil springs to raise the rear end) Turn them sideways to support the deck on the bow and mounted another one under the front end of the trolling motor bracket. Worked out perfect.
