What you are describing sounds like surface clarity issues. Some guys like seeing that while others hate it.
Here are some quick things to do right out of the gate. When in Sonar settings look for "Surface Clarity". If this is "On" you will see more of this noise than if its "off". Typically its just at the top half of the screen. Turn Auto Sensitivity "ON" and then adjust it using the arrow keys to around "-5%" or so to your liking. Color palette will make a big difference in what you see or at least how its displayed. Myself I like palette 13.
If you are not getting archs it might be a couple different things. The transducer may be pointed down or tipped up. It needs to be parallel to the bottom of the hull. I dont mean it has to be level with it, but parallel.
Also look to make sure you dont have any rivets or ribs or anything else disturbing the water in front of where its mounted.
