Hiya,

On a 1200 acre lake, you will be just fine. The waves would never get too big to be any sort of an issue for navigation, especially if there is some variety to shoreline and direction, although fishing in it on the windy side might get a little fun as a 14 foot boat will blow around a bit due to the lack of weight.

In most cases, if the wind is below 20 mph, things should be doable without too much issue.
