Tuffy uses a latex rubberized liner spray and has finished the entire interior of several boats with that material. It's pretty tough, but not real forgiving to bare feet or your knees, as bed liner isn't. I'd suggest that material as a base everywhere there is currently carpet, and white marine vinyl flooring on the deck and floor.
