As much as I'd like to put a 70 on there... there's the liability issue. Second, every time I've owned a boat my insurance company requires hp rating and verifies with serial numbers of the boat and motor. Don't think you can or should get around it. If Steve says the hull and weight distribution has changed then it probably can do low 30's with a properly propped 60 hp and that's really all I need.
