The 200 Opti has 2 thermostats, one on each head. If the water is cold, it can take a while to come out the tattle tale. I've seen mine take minutes in 35 degree water. So I'd say you're OK with the tattle tale.

Does the beeping go away when you power up? As mentioned, beeping is a non-critical alarm, so I don't think you are doing any harm, but I would probably get it in to be looked at. Maybe call your dealer service guy and ask him what 6 beeps can mean.

It's possible a T-Stat is stuck open or closed?

I had SmartCraft on mine, so I never worried about the tattle tale much. BTW, the SmartCraft gauges are the best accessory I bought for my boat. I knew what temp each head was at. The new versions are better now, too. I'd invest in one if/when I get another boat with a Merc.(Probably next year)
