My 620 has about 10 gallons of gas remaining when the gauge reads "E". My old Stratos had about 7 gallons left when the gauge hit "E". On both the gauge varied widely when low on fuel and I revved it up and got on plane. I always assumed the variation was a combination of the angle of the gas in the boat, and a desire by the manufacturer to allow for some safety reserve in not having me completely run the boat fuel system dry while on the water (if I'm in a car, I can walk to a gas station or call roadside assistance - tougher to do 20 miles from camp on LOTW).
