If it's for sale by an insuarnce company, I would suspect that the previously owner filed a claim and the insurance company totaled out the boat. I would stay away from the boat unless I or someone I trusted could personally do a total inspection on both the hull and the motor.

The boat may have been submerged for a few days but I would guess that there is more than a few scratches and some dents in order for an insurance company to total it.

You also said that the insurance co. stated that the boat hit an underwater object. Was there a hole in the hull and it has been repaired??

Did the stringers seperate from the hull?? That may have happened without putting a hole in the hull. If so., you can't tell unless the floor of the boat is removed.
