Location: Minocqua, WI | I recently rebuilt one of these. Ancient Landau that I put a Lund sticker on (don't laugh).
It still hasn't gotten wet due to the high water we've had on the rivers throughout the north but maybe next week.
I'd recommend going half inch thickness marine grade plywood for the durability. Then after making the cuts for fitting treat with polyurethane. If it adds weight it can always be removed in favor of going barren with a bed liner or whatever alternative option you have. Just make sure to leave the benches and foam insulation in and no worries.
The biggest weight concern will more than likely be from the outboard or sophistication of the front casting deck + supports if you went that far.
For paint, I recommend Duralux. Check out their site as they list the various color options and paint types. A gallon of it goes for about $50.
