I would check with a local carpet store for an installer... They have all the tools, and are used to traveling so they could do it in your garage.

I'm curious kodiak, what size and model boat is it....and what have you been quoted from some of the shops in your area?

My 690vs was quoted at $3k and up. That was the average from 4 places. I got lucky and my buddy did it for $1k . I bought the carpeting direct from Ranger and the supplies. The total was around $1500.

My buddy definitely did a better job than any shop would have done.

700 to 800 to lay carpet in a 17 foot boat doesn't seem that out of the line to me. I know it's a lot of money, but to me your paying for a skilled worker to do a good job. It's not something that gets replaced often.
