So, when running a set up like that, what's the ratio or fish caught on the crank vs. the spoon, and do specific conditions influence which is targeted? Wondering if the spoon is only an attractant, like a flasher/dodger for open water walleye and salmonids, and the fish attacks the believer every time?

I've messed around with this type for of set up for a while, 1st for trout and then in lakes with muskie/pike/walleye/ bass ect. While trolling in trout waters with a larger crank 800 spoonplug / Erie I caught only 1 trout on the larger bait and about 200 browns when both were offered never a fish faster than 3mph. Trout in Jan-March in 34* water are a very slow fish.

I also found that when activity levels allow the pike & muskie will hit the larger bait (given the choice), if there activity level is slow or post frontal weather conditions or small pike or muskie they will hit the smaller stick bait, spoon or what have you. Adult <25" or very active walleyes (summer time) will hit a big crank but this is not the norm.
