What is the best way to strip a commercial bait, wood or plastic?

with etex? or without? with etex, i just get up under the clear with a hobby knife enough to get my finger nail under it, and start pealing it off. every now and again, you need to used the knife to get you started again.

also try heating up the clear coat with a torch bubble it up and peel it off.

You can also use a 1500 watt heating gun and soften the finish to strip it off. Be care heating hollow plastic lures as the air inside will expand and buldge the plastic if you get the plastic soft.
