OK folks, help out an older, technologically challenged guy here.
Looking to pick up a GoPro for Canada this year.
Questions: Which model? Is the black overkill? OutdoorsFIRST uses Anart brand WIFI enabled cameras, great cameras under $100 with a soft case and all the mounts, two years on them now with zero issues. Also use a couple VIO POV cameras. More wires, but sweet units. A Go Pro will be equivalent feature for feature. Great cameras as well.
Mount: Chest or Hat? Hat. We like the perspective better. We also mount two in the boat running off the boat power. Settings: What settings for recording? I would prefer to not be swapping out cards all the time, but also would like to capture some nice footage. 720P is plenty, and is easier/faster to edit for most. We shoot 1080 60fps for production stuff and edit on machines designed for that purpose (16 to 32 gigs ram and i7 processor to keep the process fast) using Adobe Premier Pro CC.
Card: Bigger the better? 32 gig class 10 (Important to be class 10 for HD video), never had any issues. With 64 gig, we have
Battery backup: What brand is recommended? We use a portable battery pack that is connected to the hat with Velcro, small and light, that powers the camera for about 6 hours. My 2 cents worth!

1. Black is overkill. I recommend the silver.
2. Hat. I mount my on a ball cap and keep it Tight. I could give you more details if interested.
3. 5 or 20 minute loop setting. 1080p and 60 FPS. I like the good quality and appreciate being able to slow it way down to see the head shakes, etc.
4. Yes, up to 64GB. I recommend buying the 64GB cards. I use sandisk Pro, Extreme and Ultra. Recommend the Extreme.
5. Call me paranoid but I will not use external power since the case isn't completely waterproof. I also like being able to dunk it under to catch cool release shots. I use GoPro, Wasabi, and Smartree. All work about equally well so go with the cheap ones that come with chargers that can charge 3 batteries at once. It means, less outlets to find. I use 6-7 in a long day but like to have a couple more as back-up.

Tim, and others, which mount for a ball cap do you recommend. Looks like there are some hats that are made for mounting (they look like they would be hot to wear?) and others that mount on the bill. The headband would be awful to wear for a week straight, I think.

Just getting into my GoPro, thanks to a fantastic Fathers Day. I do have way too much time on my hands and can say the videos on YouTube from a chest mount are a lot less vomit inducing than the head rigs.

I've never watched a chest-mount-filmed video worth watching. You can't see jack with the user's arms in the way the whole time.

Here is a video of mine using the hat mount. I think it works pretty well. A bit jumpy but not too bad after running it through the GoPro editing software.
The screw is a 1/4"-20 x1/2 long. On the underside of the bill I use a star washer because it really bites into the material of the hat and prevents loosening. Another washer over that to act as a spacer to allow for a tight fit. It is also worth noting that you should use a hat with an adjustable strap and a sturdy clasp (not the common snapback type).
It is important that you look at the location of the Gopro in the case on the hat before drilling your hole. It needs to me as far back on bill as possible, otherwise it is too heavy and wants to pull the hat off your head. I will try to post pictures soon, but I have been busy packing for my week long trip at LOTW.

We have these:

Should have both at the Spring Bay Outing next month if you want to try them out.
We dremel a hole in a dry case and install a power cord for external power, then re-seal it with silicone sealant for rainy conditions. I wouldn't submerge it in deep water, but it's dry in a downpour.
As far as the hat mount, we tie strap the mounting plate provided with the camera to the cap bill and it's good to go.
Why new card? just use the looping feature on 5 or 25 minute loop and edit down/together with something like videopad? I only have one 64gb card and other than the day that the looping feature failed, it covered me all week.

What do guys use for pole mounts? IE a tall pole for that perspective that is looking down on the water/casters. Is that a custom set up or is it something you can buy?

My set for Ice.
Keith has a similar set for Ice and open water. I also still use a VIO POV a lot during the open water. If we are not wearing the camera, we power it from a USB power pack, which will allow one to shoot all day.
With two batteries per camera, and 5 soft cases and mounts, I have about $350 in all this stuff. For some reason, they even sent extra waterproof housings.

I have a SJcam from B&H as there were some knock offs.. I just ordered one that Steve had in the picks as well. $60 can't beat it. Batteries look to me all the same as well.
SJCAM came out with a motorcycle case for they cameras where you can charge and record at the same time. BRILLIANT as now with a battery back in your back or side pocket and a cable, you can record until your card is full. Not sure all these cams would fit in there (im sure they would). I watched another guy take apart a USB cable and use the same case which I am going to do.

i just got the one steve referenced too and looking forward to playing around with it ... i asume most have 2 or 3 set up at the same time in the boat? i'm hoping to be proficient enough to film some king salmon outings next summer.

I run one on a rail mount on each side of the boat and a POV mount for each angler, plus a bow/stern camera if we need one. The rail mount cameras are powered by weather proof motorcycle USB ports I ran to the rails. Keith set up a fishin' cap with a small power pack, which will run his for a few hours.
I also run a bow and stern camera mounted to a pole, powered with an Excel-Outdoors Power Plug.
