I know lots of guys love using cedar for lure making, how would maple or pine work for a crank or glide bait? What would be the benifit or downside to using these other types of wood?

Either of those types of wood should work. The properties of the wood will have an effect on the buoyancy and how the bait moves. I mostly use cedar for my baits, which is very buoyant. Harder woods are less so if I recall correctly...

Maple works good for gliders since it is already heavy and thus easy to weight.... Pine could certainly be used for a crank---lots use pine for topwater and dive/rise baits

I have a glider made by a friend that is maple and it has just the right buoyancy for a glide bait. It is not real large but heavier than you would expect. Have caught a couple fish on it and it still looks brand new.

I heard pine is stronger than cedar but pine tends to rot easier. Is this true?

I would say YES Pine would Rot faster than Cedar----But SUICKS are made of pine and I have some that are 40 yrs old--original round belly models that I still use today---Not much paint on them and they soak up water---BUT--they have never rotted-----I think ROT is absolutely Nothing to worry about--If a Pine Lure lasts 40 yrs--what more could you want.

This is true, none of my old wood suicks have rotted. They soak water like crazy now
